This past July I soaked up the sun for three days at Secrets Silversands Riviera Cancun with my best friend.  I loved every second of our getaway.  The resort is very modern and chic and you feel it as soon as you enter the main lobby and see the sculpture of silver fish.  We received a warm welcome from the staff with a cold hand towel and glass of champagne!

 

It was the perfect blend of relaxation and adventure. From peaceful pampering at the Secrets Spa by Pevonia, to an exciting bike ride into Puerto Morelos, we enjoyed the best of both worlds. Most of our time was spent lounging poolside near Manatees and sipping on refreshing cocktails at the swim up-bar.   When the sun goes down the party continues with lively entertainment.  One night we enjoyed a captivating performance at ShowTime Theater, Secrets Idol, presented by Secrets Entertainment Team.  Guests competed in a singing competition and the judges were also guests.  The music selection got us on our feet dancing.

Secrets Silversands Riviera Cancun offered a variety of dining options.  Each morning I enjoyed a hearty breakfast at World Café complete with a Mimosa and Bloody Mary bar! The ceviche at Oceana was one of my favorite meals and it is served al fresco overlooking the main pool.  El Patio is my favorite restaurant at the resort, not just because it serves authentic Mexican cuisine, but the warm ambiance is very inviting and just down right adorable. As soon as you enter the restaurant, there is a tree with blown glass hearts dangling, making the perfect photo opportunity. At least one Mexican meal is a must when in Mexico! I highly recommend the delicious guacamole and El Paster pork tacos. And of course, while we were there, we just had to order 24-hour room service one night for a midnight snack! There is truly something for everyone.

We left Philadelphia on a cold early January morning.  We left our coats in the car and boarded the airport shuttle for what was to be the most relaxing trip we had ever taken.   Even the plane ride over was restful!  Frontier Airlines seated us with plenty of leg room and the cabin crew was very pleasant.  We loved the quaint thatched roofed on the Punta Cana airport and were amazed by the efficiency of the airport staff.  All accompanied by the music of a local band.  We then met the Amstar rep., in his red and blue flowered shirt, who then showed us to our mini-bus for the ride to the hotel.

We were the second stop for the bus.  It was a pleasant comfortable ride. Secrets Royal Beach Punta Cana had a beautiful exterior.  It’s in a park-like setting with a pretty little lake running through it. The hotel porters had already taken our bags and we went into the lovely lobby to register and be taken to our room.  Our room was sumptuous!  The king-sized bed was very comfortable and every evening it was decorated with rose petals.  Our balcony had a lovely view of the courtyard and lazy river below.  The bathroom was very convenient and beautifully decorated.  It had a room for the toilet and a vanity with double sink and a beautiful walk in shower.  My husband is an amputee and they had included a chair for him to sit in while showering.  Every one of our needs were taken care of by the hotel staff!

 

 

After looking at the room we put on our bathing suits and strolled around the pool, the lazy river and then down to the beautiful beach for a delicious snack, a stroll along the waterand an opportunity to sit a stare at our beautiful surroundings.  Other than the occasional waiter taking our drink orders we relaxed to the sound of the waves, and the far off sounds of other happy travelers enjoying their day.

The first night we chose the Oceana seafood restaurant for dinner (good food and service) and later went to the entertainment in the courtyard just outside the hotel.  We listened to beautiful music and laughed at comedians.  We were pretty tired after our trip and went to bed early that night.

We had a great breakfast the next morning at the buffet and took our mimosas out to the beach to sit in the lounge chairs and enjoy the view.  After we’d been there about an hour, a man came up and invited us to a dance class.  He was gorgeous!  I took the class right on the beach just to watch this guy!  So did a large number of other women.  The rest of that day and the next are just one relaxing blur of relaxation, great food and friendly people all having a wonderful time!

I Have a Secret – Secrets Capri

 

 

I know you are not supposed to have “favorites” when you work with so many hotels in Mexico & The Caribbean, and if you do, you are not supposed to talk about them right? It’s like, when you have children, you never say which one is really your favorite.  But I do have a favorite Secrets Resort – Secrets Capri Riviera Cancun. I love it. I have written about it many times before.  It is currently a part of Apple Vacations SuperSale, so I wanted to feature it here again. If you are considering a vacation at this resort, you are making a great choice.

If you book with Apple Vacations, all of the Secrets Resorts and Spas have non-stop transfers to and from the resort, and you do not need wristbands, dining reservations or towel cards.  The service, staff, dining and amenities are exceptional at all of them as well. They are adults only unlimited luxury ™. Secrets Capri, however just speaks to me from the moment I walk in. It’s a smaller, more manageable resort for me and that is exactly what I prefer on a vacation. It reminds me of a colonial plantation resort on the west coast of Mexico.   It is very easy to walk around, and nothing seems too far away. The pool is a perfect size with space to relax and be alone, but also a pool bar to be social with other guests if you prefer.  The Cactus Club Ceviche & Taco Bar next to the pool and beach, is not to be missed.  Oceana the Fresh Seafood and Seaside Grill & Caribbean Steakhouse offer spectacular view of the Caribbean Sea while you dine.  And, the food at all restaurants is just spectacular. The rooms at Secrets Capri are a perfect size, they are a little bit larger than I was expecting and the bathrooms are beautifully decorated.  Even the beautiful yellow color of the resort is just calming.

Sure Secrets Maroma has one of THE  most amazing beaches in the world, and Secrets Silversands has a spectacular infinity pool and is a bit livelier, and Secrets the Vine is just breathtaking and in the middle of  Cancun, but Secrets Capri has my heart. Vacationing and visiting Secrets Capri is truly treat for me, since most of my vacations are family oriented and this resort is adults only.  But I cannot wait to get back here soon, very soon.

A Town Hall Meeting updated everyone on what’s happening at Apple Vacations, Amstar & AM Resorts. Site Inspections, Optional Excursions, Pool/Beach time and cocktail receptions rounded out the rest of the time. A pool side gala, featuring entertainment by Il Divo, brought the Retreat to a close.

A wonderful event, a great group of agents and 100 million reasons to say Thank You to each of them!

Pass the Grasshoppers: Cooking Class in Huatulco

 

I know it’s cliché to talk about listening to the sound of the ocean, but I am going to do it anyway.  Day 2, I woke up to the sound of waves crashing onto the beach.  And it was magical.

It was the beginning of my second day in Huatulco, and the day I was going to try my hand at traditional Oaxacan cooking.   I was thrilled, because I love learning authentic recipes and local traditions.  And, because I love eating!

To prepare for my day of eating, I started with the chilaquiles (chee-la-kee-lays) breakfast bar at Secrets.  If you’ve never had chilaquiles, open a new browser window and search for your closest authentic Mexican restaurant.  Go there, order chilaquiles, and return to this blog later.  It’ll still be here.  Chilaquiles is a dish that starts with a layer of lightly fried tortillas or chips, covered with a rich mole (moh-lay) sauce, salsa, and then crumbles of queso fresca.   I like mine topped with slices of onion and fresh avocado, drizzled with fresh Mexican crema and then sprinkled with a little extra queso.  (I’m only human, okay?)

So, after my chilaquiles warm up, a few of us headed over to cooking class in the heart of town.   The little city, La Crucecita, was founded long before all of the hotel developments along the coast, and still thrives today. The town square is lined with colorful buildings, bright green almond trees, and cobblestone streets.  I was taking thousands of photos and looking like a total turista as we pulled up to our destination.

We climbed the stairs of a corner building, up through tangled vines and hibiscus flowers that lined a colorful staircase. I took approximately 50 more photos.  We entered Café Juanita, a cozy restaurant owned and operated by a dynamic husband and wife duo, Alfredo and Jane.   Alfredo began to tell us about Oaxacan cooking and growing up in Huatulco, and offered us cold beers and cold teas.  I won’t mention which one I chose: but let me remind you again that I’m only human.

In the middle of the room, there were a variety of colorful bowls brimming with different types of Chiles.   I must confess that before, I thought that chiles came in two varieties…Red and Green.  Please don’t judge my stupidity.  There are apparently hundreds of types of chiles, all varying in color, size, sweetness, and spiciness, and they are an integral part of Mexican culture and cuisine.

Alfredo explained how different types of chiles create different types of mole sauces.  Mole is a Mexican staple, a rich dark brown sauce, made primarily with roasted ground chiles, fruits, and spices and often cocoa.  He told us how some moles have over 100 ingredients and take weeks to prepare.  For the record, my cooking skills are decent, but I’m lucky if I use any spices besides garlic salt.

Thank goodness Alfredo had already prepared the mole: we were just in charge of the tacos. We started with homemade corn tortillas, which were very different than the soft stacks of white, flour tortillas that I’m used to.  Corn tortillas are richer in flavor, and the only kind of tortilla that any self-respecting Oaxacan would eat.

We rolled out the dough and used a tortilla press to make perfect symmetrical circles.  Okay, I’m lying.  Mine was a lopsided and hideous oval, and absolutely nothing like Alfredo’s sample, but it was delicious.  We grilled the tortillas on clay plates heated over the stove, and made several varieties, for tacos, sopes (so-pays), and tlayudas (clay-you-das).

Alfredo then introduced us to Oaxacan cheese, a cheese that is so good, it has ruined all other cheeses for me.  This cheese is salty, smooth and mild, and is rolled up into large balls and cut in long pieces when served.  Alfredo made a mistake by letting us taste a few pieces of cheese, because I then became addicted.  All I wanted was to eat the whole ball of cheese, and Alfredo had to babysit me and the cheese ball, so we could have some left for the recipes.

We stuffed the tacos with crisp hibiscus flowers (truth!), avocado, and fresh pico de gallo (If you aren’t familiar with pico de gallo, it’s a fresh salsa with peppers, tomatoes, onions, and cilantro).  We also made a shrimp version, with huge, succulent fresh prawns. I was in heaven, and about to take my first bite… until Alfredo instructed us to sprinkle on the finishing touch. Grasshoppers.

Okay, bear with me.  I told myself before the class that I would try anything, and I had to stay true to my word.  Before I took a bite of my grasshopper taco, I cringed and mentally prepared to make a scene, dramatically spit it all out… But, alas.  They were great!  If you had told me they were bacon bits, I would have believed you, polished off 4 tacos, and then asked for seconds.  Roasted grasshoppers are a famous ingredient in Oaxaca, and they are served roasted, salted, and sprinkled on a variety of dishes for a little bit of salty insect pizazz.

We also made homemade salsas, with fresh roasted tomatoes and chiles that we crushed with a mortar and pestle.   The flavors were phenomenal, and made us all second guess the jarred salsa we’re so familiar with in the states… Sorry, El Paso.

For the sopes, we cooked the tortillas a little thicker, (more like pancakes) and pinched grooves into the top to keep the ingredients in place.   Then I got in trouble for eating more cheese.  We sautéed a mixture of onions, tomatoes, and garlic, and then spooned this mixture over the sopes, with a little drizzle of mole.  We sliced a few pieces of Oaxacan cheese over the tops, and then put all of our creations on a big platter and sat down for our feast, complete with fresh hibiscus margaritas.

We couldn’t have been a happier group, and I even bought a container of grasshoppers to bring back with me to the US.  (I haven’t dipped into them yet, but you never know.) I wanted to bring cheese too, but had to draw the line when it came to refrigeration on the flight home.

This experience pushed me far out of my cooking comfort zone.  Our hosts at Café Juanita were amazing teachers, and I would recommend everyone checking out their “Chiles and Chocolate Class.”   I learned to love mole sauce, to be more adventurous with ingredients, how to make my own tortillas, and how to whip up salsa using fresh tomatoes, garlic, and jalapenos.

I also learned that the best way to stop the severe burning in your mouth after eating spicy foods is by drinking milk.

Overall, the destination provided a perfect combination of incredible scenery, warm people, and amazing cuisine.  I felt like I experienced a side of Mexico that few people get to see, and I cherish the experience to this day.  This slice of heaven on the southern coast is the perfect place to truly experience authentic Mexico, while surrounded by breathtaking natural beauty.  So for now, my parting advice to you, if you are lucky enough to visit Huatulco… try the grasshoppers.

If you like Piña Colada’s and getting caught in the rain…

I just got back from Secrets Vallarta Bay Resort & Spa a couple weeks ago. It was truly amazing; the pools, the beach, the view from my room, the über-relaxing spa and every luxury you could imagine. I’ll get in to more detail in an upcoming blog so be sure to keep an eye out for it.

Anyways…

I found myself ordering an “oldie but goodie” drink when I was hanging out at the Lobby Bar, Rendezvous… The classic  Piña Colada. Since I enjoyed this drink so much while at Secrets Vallarta Bay, I wanted to provide you with the recipe so you could make this tropical libation at home! Cheers!

 

Ingredients:

  • Ice cubes
  • 1/2 cup rum
  • 1/2 cup coconut cream
  • 1/4 cup coconut milk
  • 1/4 cup pineapple chunks
  • Sliced pineapple, for garnish, optional

Directions:

Fill blender halfway with ice cubes. Add rum, coconut cream, coconut milk and pineapple chunks. Puree. Serve, garnished with a slice of pineapple, if desired.

If you like piña coladas (“and getting caught in the rain!”) fix yourself an ice cold drink and enjoy responsibly.

Falling in love with Cancun, all over again.

Apple Vacations has been sending vacationers to Cancun for well over 30 years.  It’s crazy for me to think that my first vacation there was over 20 years ago.

So much changes year to year in any destination, but Cancun recently has had so many new developments. It really is an entirely new destination.

So many people say to me “I went to Cancun for spring break” or “I went to Cancun or before I had kids, I want to try a new place.”  Even just yesterday someone said those exact words to me at a baseball game. I tell them Cancun IS a new place. It’s an entirely new resort destination with so much to offer. There are amazing family resorts and several new upscale resorts which have opened in the past few months, or are about to open.

Recently, I was lucky enough to spend a week and experience all the beauty, charm, cuisine, history and hospitality of Cancun. I can’t wait to share my reviews and photos of the destination and the hotels I was able to visit such as Sandos Cancun Luxury Resort, Secrets The Vine Cancun and Iberostar Cancun.

Meanwhile, here are my top 3 reasons why YOU should book an Apple Vacation to Cancun:

1 – It is easy to get to. We left in the morning and were on the beach by lunch! From the Mid-Atlantic region the flight to Cancun is only about 3-3.5 hours depending on your departure airport.

2 – There is a hotel for every lifestyle and budget.  Big or small resort, all inclusive or no dining package, family resort or adults only, simple or deluxe – there is a hideaway for everyone.

3 – Cascading pools, white sandy beaches, the turquoise ocean.  The destination and the resorts are striking.
